Console emulators. I'm talking n64, ps1 (multitap games), snes (they had multitap games aswell), dolphin (gamecube and wii), etc.
Dungeon Defenders I believe has 4 player split screen.
If you like quake, get quakeforge or another modern engine, run it in a window 4 times tiled out. Setup the controls for each window with a different joystick, host the game on the first window, and have the other 3 connect up. You can use more than 3 if you want, but you will want each copy of quake to be in it's own folder to keep the config files straight. I did this in linux once to play splitscreen with my roomate.
Sports games -- there are a few on steam.
