As you probably know, there are two models: 1000 (PlayStation Vita) and 2000 (PlayStation Vita Slim).
PSV-1000 features an OLED display and much better colors at the risk of a possible burnin due to the nature of the OLED technology. This is especially true for a gaming handheld, since there are often game elements (e.g. HUD, life bar etc.) present at the same position a lot of the time. There are two versions of the PSV-1000 available: Wi-Fi only and Wi-Fi/3G.
PSV-2000 features a LCD (just like PSP did), which doesn't look as beatiful as the OLED panel in PSV-1000 but also can't get any burnin. It's also lighter and smaller. Unlike the PSV-1000 there is only a Wi-Fi only version available.

There is a CFW available: Henkaku/Enso. Later firmwares have been hacked recently.

No, Sony has stopped production by now. You may find a sealed PS Vita somewhere, but I'd just be looking for an used one in good condition.
