I have a few questions for you:
1 - why would you replace such an awesome console?
2 - why would you replace such an awesome console?
3 - why would you replace such an awesome console?
my questions aside, let me try to answer yours:

you can manually backup saves, music, videos and pictures and transfer it to the other PS3. As for games, I'm pretty sure you'd have to redownload and reinstall them on the new PS3, but it can't be that easy as that would allow anyone to just share accounts. My guess is that you will have better luck talking to someone over at sony, I recommend this before changing systems.

I would simply restore that PS3 to factory default just in case

I think you can, but you are very limited to what you can transfer

A year ago my 80GB PS3 died and I got a 60GB model (I LOVE IT!), fortunetely for me I keep backups of all my system's savedata's so I didn't loose most of my game's progresses, except a few games that either disabled trophies when I loaded the saves, or some saves that didn't even copy in the first place. But overall you shouldn't have problems with saves, music, pictures and videos, but you will have problems with PSN purchased games and your PSN account in general.
