I'm a noob to this
I recently purchased a PSP 1001 on ebay for the specific purpose of using it for emulators. It came with OFW 6.31. Now I have read the tutorials, researched youtube and watch at least a dozen videos. The application of a CFW seems dummy-proof. Now that being said. The problem I have is when I start delving into which CFW to apply I run into many abbreviations and verbiage that confused me and/or brought my brain to a screeching halt. I guess in the simplest terms, I'm trying to determine which CFW is best for me and if the application of such is as fool-proof as it seems. There doesn't seem to be a definitive (as far as i can tell) list of differences in Pro vs. ME vs. LME. (The latter two are the most confusing for me) Hoping someone can take me by the hand and explain this to me. Really chomping at the bit to get this running.

Okay, but what I'm trying to get at is, why ME would be preferable over ProC or vice versa. and I've read many posts where there is debate of 6.60 vs. 6.61.

Tiny differences all do the same thing one way or another.

I'd use the 6.61 ME 2.3 OFW version, correct?

Thats fine. The "OFW Version" is pretty much the CFW installer that works on any PSP, even if it runs the default Sony FW.
(the other ME CFW installer only works on a PSP that already runs a CFW)

99.9% success. The CFW is onboard, however after renaming the OFW 6.61 to 661.PBP I now have an icon that says corrupt data. Is that normal and if so is there a way to hide it?

Just delete folder, not needed after update.
