I'm gonna say God of War III, even though I don't own a PS3 and have never played the game.

They're even "clones" of this game, because it is so good, such as Castlevania (the newest) and Dante's Inferno.

Demon's Souls is one game you need to try out if you're looking for ps3 exclusives. It's one of those games that you have to play over and over until you beat the first level. (LOTS of patience is required to enjoy this game, but it is well worth it.)

I'd go for Uncharted 2 also, though I didn't play it yet but wish I could soon. A video game store around sells a used copy for 50 bucks... I prefer to wait the price to go down...
