There's a couple of things that I can think of which would make good use of the vita's hardware.
First of all, we know Deadalusx64 works somewhat on the PSP, but it's far from ideal. Framerate issues, lots of necessary optimization and many game crashing bugs. It made good use of the hardware of the PSP, but I think it would be possible to make N64 emulation work a lot better on the Vita.
The same goes for MsDos. Dosbox had a port on PSP but it's far from ideal as well. It was only able to handle a handful of games and not all too well.
I noticed Dreamcast and PS2 emulators being mentioned, but I'm not sure to what kind of degree it would be possible. I think it can be worth a shot though.
The more realistic option would be to work some more on the DS emulator. It's easily possible for modern phones, so I can't imagine the Vita running into problems there.
Other than that, I would love to see some open source ports of games, such as Heroes of might and magic, RCT and some more.
